I won’t lie, square cakes keep me up at night. Getting those perfectly straight corners is really hard! Like anything else in life, the more I do it, the better I become.
Flavor: hazelnut cake with raspberry jam filling and almond buttercream
Normally, my cakes are made up of three layers of cake and two layers of filling. I wanted this cake to be an actual cube, so I added an additional thin layer of cake and filling to get the height I wanted.
I cut out the letters using a template. I kneaded in a good about of Tylose powder so the letters would dry nicely.
I iced the cake as smoothly as possible and then covered it in fondant using the paneling method. I would normally hide the seams with royal icing, but because the design has the colored strips, I skipped that step. I used my ribbon cutter to cut 1″ strips and applied those to the edges of each side and attached them with a little dab of water.
I attached each letter using a small amount of edible glue.
